Rosemary Shortbread Cookies
1 C Butter
1 T Freshly minced rosemary
½ C Sugar
1 ½ C Flour
½ t Vanilla
Preheat oven to 275 degrees. Cream butter and sugar. Add vanilla and rosemary. Add flour by hand. Roll dough ½ inch thick and cut into desired shape using your favorite 2-inch cookie cutter. Prick cookies all over with a fork. Place on un-greased cookie sheet and let cookies “rest” for 10 minutes before baking. Bake for 30-45 minutes. Watch carefully for the last 15 minutes. Cook thoroughly and store in an airtight container. The rosemary flavor becomes stronger by the second or third storage day. Make approximately 24 cookies.
